Hot Chocolate Marshmallow Filled Cupcakes

Ok – how delicious do these cupcakes look? With the weather getting cooler, the kids are asking for hot chocolate almost every day. Hot Chocolate with Marshmallows? GOOD. Cupcakes? GOOD! Even better? A combination of the two! Your kids are going to love these (and you probably will as well) and they are fairly easy to make – just a few extra steps more than making “regular” cupcakes with a store-bought mix!

Just look at the inside of these bad boys:

Are you drooling yet? Well then, let’s get started! To make them, you will need:

For the Cupcakes:

  • 1 chocolate cake mix + the ingredients called for in the directions on the box

Marshmallow filling and Icing

  • 1.5 sticks softened butter
  • 1/2 cup confectioners sugar
  • 7 oz jar Fluff Marshmallow
  • 1 cup mini marshmallows
  • 1/4 cup mini chocolate chips
  • 3 colorful straws

Directions:

  1. Make cupcakes according to box instructions. Allow to cool completely
  2. To make the icing/filling Beat butter in a mixing bowl or stand mixer until creamy
  3. Add in confectioners sugar a little bit at a time until all is added and blended
  4. Add in vanilla and marshmallow blend well
  5. After cupcakes have cooled cut a small cone in to the top of your cupcake with a knife. This is very simple (see picture). Remove the cut piece of cupcake and set to side.   Copy of IMG_0563
  6. Place your frosting in a plastic bag or in a pastry bag and squeeze frosting into the hole you just created
  7. Trim your piece of cupcake that you removed and place back on top.
  8. Swirl your frosting on top of your cupcake.
  9. Garnish with mini marshmallows, mini chocolate chips and straw.
  10. Try not to eat them all at once

Strawberry White Chocolate Chip Cookies Recipe

Valentine’s Day is coming up and this strawberry white chocolate chip cookies recipe is just so easy to make! It’s made with a strawberry cake mix, but you can really use any flavor cake mix and customize it for any holiday. If you want a chocolate white chocolate chip cookies recipe – just swap the strawberry cake mix for Devil’s Food cake and you will be good to go!

As always, I strongly advise using parchment paper when baking your cookies. Not only does it help to make cleanup a breeze, it stops the cookies from spreading too much. Almost every time that someone has emailed me that a cookie recipe didn’t work out for them, they DID skip the parchment paper. So please use it!

One key to this recipe is to be sure not to overmix your cookies. Once you add the cake mix, stir just until you don’t see any dry lumps in your batter. Overmixing your cookies will give you tough cookies!

  5. Add egg mixture to cake mixture and stir all together just until all the ingredients are incorporated. Do not overmix
  6. Fold in Chocolate Chips.
  7. Drop round (about 1 Tablespoon) balls onto baking sheet.
  8. Bake for 10 minutes, being careful to not let them brown.
  9. Remove from oven and allow to cool slightly before transferring to a wire cooling rack

Notes

You can easily change the flavor of the cookies by changing the flavor of the cake mix! Use Devils Food cake mix for chocolate cookies, Lemon cake mix for lemon cookies, etc

Microwave Fudge | 2 Ingredient Strawberry Fudge Recipe

It seems early to be talking about Valentine’s Day, doesn’t it? But there you go…it’s pink and you can cut it with a cookie cutter, making it perfect for heart-shaped fudge. Then again, you can really make this any time of year and cut it in any shape!

Now, I do enjoy making fudge from scratch, sometimes you want something quick and easy and this 2-ingredient microwave fudge recipe is just that. And frankly?  If I am making fudge for the kids, they can’t tell the difference between fudge made from scratch and microwave fudge!

This is a great recipe for that last-minute “Oh Mom – I forgot to tell you that I have to bring something to school for the party tomorrow!”. There is no candy thermometer needed, no worries that it will turn out wrong.  Unless you refuse to stir the chocolate every 30 seconds while you are melting it, you literally have to TRY to mess up this recipe!

To make this, you just need 2 simple ingredients:

Just melt the entire package of chocolates/candy melts in a glass bowl in the microwave, stirring every 30 seconds until complete smooth

Add in the can of frosting and stir to combine.

Press in to a pan that is sprayed with non-stick spray or parchment paper. Decorate with sprinkles (optional)

Chill for about 30 minutes and then either cut in to squares with a knife or use a cookie cutter to cut them in to shapes!

Microwave Fudge | 2 Ingredient Strawberry Fudge Recipe

An easy 2-ingredient microwave fudge recipe that can be customized for any holiday. Just change the color of the candy melts and/or the frosting!

Ingredients

  • 1 16oz can Strawberry Frosting
  • 1 12 oz bag White Chocolate or Vanilla Candy Melts
  • Heart shape decorations (optional)

Instructions

  1. Line an 8" x 8" pan with parchment paper or spray with cooking spray.
  2. Place candy melts in a medium bowl and place in the microwave on high for 30 seconds.
  3. Stir candy melts
  4. Continue melting candy melts in 30 second intervals, stirring after each until completely melted and smooth
  5. Immediately stir in frosting until well-mixed.
  6. Spread mixture in to the pan, smooth the top and decorate as desired
  7. Chill in the refrigerator for at least a half-hour to set.
  8. Cut into squares or use heart-shaped cookie cutter and serve.

Notes

In an 8x8 pan, the fudge will be about 5/8' thick. If you want thicker fudge, just make a double batch!

Eggnog Bread Pudding Recipe

It’s a new year which means that it is pretty much the end of “Egg Nog Season” but you can still find it at many stores for a few more weeks.  If, like me, you love the taste of egg nog but your stomach can’t really stand the richness of it as a drink, you are  absolutely going to love my eggnog bread pudding recipe.

Sweet enough to be a dessert (especially with the vanilla sauce) or simple enough for a weekend breakfast (just dust with some powdered sugar), this is a great way to use up that leftover egg nog (or if you are an egg-nog-aholic, you can always make my easy egg nog recipe and have it year-round).

One of the keys to my eggnog bread pudding recipe is the bread.  Growing up, my mother always made homemade challah bread and used it for making french toast, bread puddings and more.  I am lucky that I can usually find challah at the grocery store (until I start making it myself), so that is what I use.  If you can’t find or make challah bread, you can always use French bread or, in a pinch, even just “regular” bread!

If what you want is a nice custard-like bread pudding, you will want to make sure that, once you combine your ingredients, you let the liquid really soak in to the bread. I mix it up in a large bowl and let it sit for about 15 minutes, stirring/tossing the bread every few minutes. Once there is very little liquid sitting in the bottom of the bowl, you are ready to spoon them in to the ramekins.

I like making these in ramekins so that it makes for a pretty presentation, but you can always just bake it in a 9″x13″ baking dish. If you make it in a baking dish, you will just need to add a few minutes to the cooking time to make sure that the center is completely set.

Look how pretty they puff up in the oven! After they cool, they will collapse a bit….but that is fine!

To serve them, you can just dust them with some powdered sugar

  • 1 loaf (1 lb) challah bread, cut in to cubes
  • 8 eggs, beaten
  • 2 1/2 cups half & half
  • 1 1/2 cups eggnog (store-bought or you can make your own eggnog)
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 1/2 tsp nutmeg
  • dash of salt
  • 2 Tbsp dark rum (or 3 Tbsp rum extract)
  • 1 tsp vanilla extract
  • 1 1/2 cups golden raisins

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup heavy whipping cream
  • 1 Tbsp vanilla

  6. Spoon mixture in to prepared ramekins or baking dish. Place ramekins (or baking dish) on a cookie sheet and place in the oven.
  7. Cook for about 40 - 45 minutes (50 - 55 minutes if using a baking dish) until pudding is completely set and starting to brown on the top.
  8. Remove from oven and allow to cool.
  9. Top with powdered sugar or vanilla sauce
  10. Vanilla Sauce Recipe
  11. Combine all ingredients except vanilla in saucepan or non-stick skillet.
  12. Cook over medium heat, stirring often, 5-8 minutes or until mixture thickens and comes to a full boil
  13. Stir in vanilla
  14. Cool slightly and pour over bread puddings

Oreo Stuffed Cupcakes with Cookies and Cream Frosting | Easy Dessert Recipe

These are so fun to make (especially with the kids) and if you use a boxed cake mix, can be such an easy dessert recipe.  Make these for a birthday party, a party at your kids school or even just a surprise treat for the kids when they get home from school!

Now, of course, I could make the chocolate cupcake batter from scratch, but why do that?  I know that there are some people who might yell about GMOs and additives, but until I find a homemade cupcake recipe that turns out as light and fluffy as the ones that I get from the boxed mixes, I am comfortable sticking with the boxed mixes.  Of course – if anyone has a recipe for cupcake batter that turns out as good as the mixes – feel free to let me know.

Where I won’t compromise is with the icing/frosting.  The stuff that comes in a can literally makes me gag, but I grew up with homemade frosting for everything, so I may be a little spoiled.  If you don’t mind the taste of canned frosting, you can make this even more of an easy dessert recipe by simply mixing crushed Oreos with a can of vanilla frosting.

  5. Bake according to directions on the package (typically about 22 minutes)
  6. Remove from oven and cool completely.
  7. To make the icing:
  8. In a mixer with the paddle attachment, beat together the butter and shortening until blended.
  9. Add vanilla and beat until blended
  10. Add powdered sugar, 1 cup at a time and scraping the sides of the bowl as needed until all ingredients are incorporated.
  11. Add milk, 1 Tbsp at a time until frosting is the right consistency.
  12. Beat frosting on high for 2 minutes until light and fluffy.
  13. Add crushed Oreos and beat for another 30 seconds
  14. Add a little more milk if the frosting seems to stiff.
  15. Frost the cupcakes with the icing (or you can use a basic piping bag and tip). Stick a mini Oreo in the icing for decoration

Christmas S’Mores + More Easy Kids Christmas Cookies Recipes

If you still need some ideas for last minute easy kids Christmas cookies recipes, give these a try!  Not only should the children love them, but they are easy enough that you can make them together! You will need to melt the butter and sugar together, but the kids will have fun placing the graham crackers as well as arranging the marshmallow and M&M’s for “maximum candy coverage” (at least, if your kids are anything like mine are)

To make them, you will need:

  • 18 Graham Crackers
  • 1/2 cup Butter
  • 1/2 cup Brown Sugar
  • 2 Cups Mini Marshamllows

Chocolate Peppermint Fudge | Christmas Cookie Idea

So if you haven’t been able to tell, I have a things for Christmas Cookie recipes. I also have a thing for the combination of chocolate and peppermint (have you tried my Oreo Peppermint Cookie Balls yet?) If you need a last-minute treat to take to a party or send in to school with your children, this Peppermint chocolate fudge needs only a few ingredients and takes longer to cool than it does to make!

Microwave Chocolate Peppermint Fudge

Ingredients:
(2) 14 oz Packages of Semi-Sweet Chocolate Chips
1 1/2 Cans Condensed Milk (21 oz)
1 Tsp Peppermint Extract
3 Candy Canes

Directions:
Chop candy canes in a food processor or crush inside of plastic bag
Combine chocolate chips, condensed milk and peppermint extract in a large bowl
Microwave for 1 minute and then stir
Return to microwave for an additional 1 minute
Mix until smooth
Pour mixture into a greased 8X8 pan
Top with candy cane pieces
Refrigerate for 1 hour

One thing that I like to do: when you chop the candy canes, you will likely have some “candy cane dust” mixed in with the chunks. Simply blend the dust in with fudge before pouring it in to the pan. It just gives it a little more peppermint flavor! This is also a good way to get the flavor in to the fudge if you don’t have peppermint extract and don’t want to go out and buy it!

Chocolate Cherry Christmas Mice | Christmas Cookie Idea

The combination of cherries and chocolate is one of my favorite flavor combos and these Cherry Chocolate Christmas Mice take care of that craving quite nicely while looking so cute on any cookie tray!

This is another Christmas treat that you can easily make with your children. They will love swirling the cherries in the chocolate and helping you unwrap the Hershey Kissess (and will probably sneak a few for themselves).

Dipping fruit in chocolate is a little different than dipping cookies, etc (like my Oreo Truffles recipe). The reason is that fruit, especially when you keep it in the refrigerator and then pull it out to use, tends to have more moisture on the outside. That moisture will almost “repel” the chocolate when you try to coat the cherry. Of course, you are going to want to rinse your cherries before you coat them with chocolate – just make sure that they are completely dry and at room temperature and you should be fine!

  • 1/2 cup Light Cocoa Candy Melts
  • 1/8 cup White Candy Melts
  • 24 Almond slices

Instructions

  1. Heat Light Cocoa Candy Chips in small bowl by microwaving for 30 seconds stirring and repeating until melted.
  2. Hold cherry by stem and dip in chocolate making sure to get complete coverage
  3. Place bottom of cherry against bottom of Hershey Kiss and place on wax paper.
  4. Gently insert 2 Almond slices between the cherry and the kiss to create ears.
  5. Allow to cool and set and refrigerator for 5 minutes.
  6. Heat White Candy Chips in small bowl by microwaving for 30 seconds stirring and repeating until melted.
  7. Using toothpick, gather up small bit of melted white chocolate and paint on each eye.
  8. Allow chocolate to set.

Easy Christmas Cookies Recipes | Snowflake Cookies + More

We’ve been in full-on “cookie mode” lately and with 3 kids, a husband and a business and household to run, easy Christmas cookies recipes are the key to getting the most done! I’ve shared a bunch of my cookie recipes with you (more links at the bottom of this post) and here is another one for you – Snowflake Cookies!

You will need a Snowflake Cookie Cutter if you don’t already have one and I strongly suggest using a small piping tip from a basic cake decorating set (you can also easily pick both up at Michael’s, AC Moore, Walmart, etc). but you can still pipe the icing using a sandwich bag with a TINY hold cut out of the corner. Get the kids involved in the action by letting them help you cut and decorate the cookies!

INGREDIENTS

  • 3 cup Flour
  • 3/4 tsp Baking Powder
  • 1 cup softened Butter
  • 1 cup Sugar
  • 1 Egg
  • 1 tbsp Milk
  • White Pearl Decorations

ICING INGREDIENTS

  • 3 Egg Whites
  • 1 tsp Vanilla
  • 4 cup Powdered Sugar

DIRECTIONS

  1. Combine dry ingredients and set aside
  2. Cream butter and sugar.
  3. Add beaten egg and milk.
  4. Gradually add in flour.
  5. Divide mixture in half, place one half in plastic bag in refrigerator.
  6. Place remaining dough between parchment paper and roll to uniform 1/4″ thick and place in refrigerator to chill.
  7. Cut out stars and transfer to parchment coated cookie sheet.
  8. Gather and reroll remaining dough between parchment paper and roll to uniform 1/4″ thick and place in refrigerator to chill; cut out stars
  9. Bake in 375 degree oven about 7-8 minutes (watch for edges to begin to turn lightly brown).
  10. Leave on cookie sheet for several minutes before moving to cooling rack. (otherwise they may lose their shape if you try to move them while they are still too hot/soft)
  11. To make the icing: Combine the egg whites and vanilla and beat with a mixer until bubbly. Add powdered sugar gradually and mix until all sugar is incorporated. Beat on high until mixture forms stiff, glossy peaks.
  12. Transfer to pastry bag and pipe pattern on cookies.   snowflake process
  13. Place white pearl of icing at each point where icing lines cross.

If you are looking for another easy cookie recipe, you need to try this one! We made these Candy Cane Blossom Cookies when I had the opportunity to visit the Hershey Test Kitchens and participate in a cookie swap with the children of the Milton Hershey School (seriously – you should read the story of my trip. What I learned about Hershey and especially the Milton Hershey school made me incredible loyal to Hershey…not that I really needed another reason to love Reese’s Peanut Butter Cups) . This is just one of the recipes that we made!

Recipe: Candy Cane Cookie Blossoms

Ingredients

  • 48 HERSHEY’S KISSES Brand Candy Mint Candies
  • 1/2 cup butter or margarine
  • 1 cup granulated sugar
  • 1 egg
  • 1-1/2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons milk
  • Red or green sugar crystals, granulated sugar or powdered sugar

Directions

  1. Heat oven to 350°F. Remove wrappers from candies.
  2. Beat butter, granulated sugar, egg and vanilla in large bowl until well blended. Stir together flour, baking soda and salt; add alternately with milk to butter mixture, beating until well blended.
  3. Shape dough into 1-inch balls, then flatten slightly.
  4. Roll in red sugar, granulated sugar, powdered sugar or a combination of any of the sugars. Place on cookie sheet lined with parchment paper.
  5. Bake 8 to 10 minutes or until edges are lightly browned and cookie is set. Remove from oven and press a Hershey Kiss into center of each cookie. Remove from cookie sheet to wire rack. Cool completely

Of course, you can mix this up and use just regular Hershey Kisses throughout the year! My children actually prefer this cookie with the traditional Kisses.

Candy Apple Pie Recipe

Some flavors just go together, like caramel and apples (have you tried my caramel apple recipe or my caramel apple cheesecake in a jar recipe? If not, you really need to do so!) And now it’s time for a dessert that deserves the place of honor on any table at your dinner table – the Candy Apple Pie recipe!

Inspired by this recipe, I wanted a recipe with a little more “wow factor” on a dessert table. This candy apple pie recipe is very sweet so just a small slice will be good enough for most people! Serve it with coffee, tea or just a tall glass of milk!

Candy Apple Pie Recipe

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon
  • 1/3 cup butter, melted

On Top Of The Filling:

Apple Filling:

Cream Cheese Filling:

  • 8 oz. cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 tablespoon lemon juice
  • 1 tsp lemon zest
  • 1 teaspoon vanilla

Topping:

Directions:

  1. Preheat oven to 350 F.
  2. In a medium bowl, combine the graham cracker crumbs, sugar, cinnamon, and melted butter. Mix until completely combined and press into a springform pan (line the bottom with parchment paper first for easy removal) and up the sides of the pan.
  3. Bake crust for 8 – 10  minutes until slightly browned. Remove pan from oven and set aside until crust is completely cooled.
  4. Pour caramel on top of crust and top with 1 cup of chopped pecans.  crust-pecans
  5. Top crust/caramel/pecans with fried apples crust-apples
  6. With a mixer combine cream cheese and sugar until smooth. Add the egg, lemon juice, lemon zest, and vanilla and beat for 1 minute or until completely smooth.
  7. Pour cream cheese mixture over the fried apples in in the pan.
  8. Bake for 30 minutes until an inserted knife comes out clean. Remove pie from oven and let cool.
  9. Refrigerate for 4 hours or until filling is cool and firm.
  10. Top with whipped cream, caramel topping, and chopped pecans.
  11. Serve and enjoy!

Just be careful making this and bringing it to a party. One bite and everyone will be asking you to make it for them for every party!  candy apple pie recipe
