Recently, I teamed up with some of my fellow Savings.com DealPro Ambassadors in a challenge to create and swap some Fast Five Recipes. Fast Five recipes are ones that are simple to make, and can be on the table in less time that it takes you to order and get a pizza. The Savings.com Meal Planning Workshops encourage you to have at least 5 “go-to recipes” that can be prepared from scratch, yet are simple enough to make on those nights when you are running around with the kids, etc.

For this challenge, we each submitted a quick and easy recipe. In return, we were sent the recipe submitted by another Savings.com DealPro, a few goodies and a $20 gift card in order to purchase the ingredients for the recipe.

The recipe that I got to try was provided by Renae from How To Have It All and it was delicious. The best part is that this recipe can be so easily tweaked to include your favorite vegetables or even ones that you just have left over in the fridge! Serve with a side salad for dinner, or even with fresh fruit and have it for Sunday breakfast!

Vegetable Frittata With Feta Cheese Recipe #FastFiveMeals

Ingredients

  • 2 tbsp. extra virgin olive oil
  • 1 zucchini, diced
  • 8 oz mushrooms, sliced
  • 1 clove garlic, pressed
  • 1 cup baby spinach leaves
  • 9 eggs
  • 1 tsp basil
  • salt & pepper to taste
  • 3/4 cup feta cheese

Instructions

  1. Preheat the broiler in your oven
  2. In a large cast iron or oven-safe non-stick skillet, heat the olive oil over medium heat
  3. Add the zucchini, mushrooms and garlic. Saute until soft, about 5 minutes
  4. Add in the spinach and cook for a minute or two (until it starts to wilt)
  5. While the vegetables are cooking, beat the eggs in a bowl. Add salt, pepper & basil.
  6. Pour the eggs over the vegetable mixture and cook for about 5 minutes or until the eggs are set.
  7. Remove the pan from the heat and sprinkle with the cheese.
  8. Cook under the broiler for 2 minutes or until the cheese melts.
  9. Cut in to wedges and serve with a side salad or fresh fruit

  • 12 ounces turkey breakfast sausage
  • 1 cup frozen shredded hash brown potatoes, thawed
  • 1 cup (4 ounces) shredded fat-free cheddar cheese

I’m so glad that Cinnamon Rolls count as a breakfast food because than we get to eat yummy things like this Cinnamon Roll Cake for breakfast and not feel guilty, right? To make it you need:

  • 3 cups Flour
  • 1/4 teaspoon Salt

No Bake Coffee Balls

  • 8-ounces crisp, unfrosted sugar cookies, finely crushed (2 cups)
  • 1 cup toasted hazelnuts, almonds, or pecans, finely chopped
  • 1 cup sifted powdered sugar
  • 1/4 cup light-color corn syrup
  • 2 tablespoons coffee-, orange-, or almond flavor liqueur

Red Velvet Pancakes

Looking for something fancy to serve for breakfast on Valentine’s Day? Check out these Red Velvet Pancakes! To make them you need:

  • 1 1/4 cups all purpose flour
  • 2 cups red velvet cake mix
  • 1 Tablespoon sugar
  • 3/4 teaspoon baking powder
  • pinch of salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 oz. Cream Cheese
  • 1/4 c. Butter, softened
  • 2 – 2 1/2 cups powdered sugar
  • 2-3 tbsp. milk
  • splash of vanilla, if desired

Breakfast Egg Bake (Weight Watcher Friendly: 6 Points Plus)


So after I made my Lemon Pound Cake for my children, I was looking for a use for the leftover egg whites and decided to make a breakfast egg bake. Nobody else in my family will eat meat substitutes, so I wrapped up the other 5 servings in individual bags and froze them. Now I have a great breakfast ready to go! Just pull one out of the freezer the night before to defrost and microwave to reheat!

Recipe: Weight Watcher Friendly Breakfast Egg Bake

Summary: stave off the mid-morning crash with a protein-packed breakfast!

Ingredients

  • 4 large eggs, beaten
  • 8 egg whites
  • 1/2 green pepper, chopped
  • 1/2 yellow onion, chopped
  • 4 Morningstar Farms sausage patties, prepared according to package directions and chopped
  • 1/4 lb shredded gruyere or swiss cheese
  • 3 slices reduced-calorie whole wheat bread, cubed
  • salt & pepper
  • non-stick cooking spray

Instructions

  1. Spray a 9″x6″ pan with non-stick spray
  2. In a bowl, combine all ingredients, stirring well to make sure that all bread has been coated by the eggs.
  3. Pour mixture in to prepared pan. Cover and refrigerate for 2 hours or overnight
  4. Preheat oven to 350
  5. Bake uncovered for 30-35 minutes or until eggs are set.
  6. Serve immediately
