If you need a last -minute treat to make for Easter, or just want to know how to make them yourself after they are gone from the stores, then you are going to want to try making these copycat Reese’s Peanut Butter Cup Eggs recipe!

Of course, these can be made all year-round and, like the original, they freeze really well. They can be made in any shape so you can easily enjoy one of your favorite treats, made from scratch! I actually will double or triple this recipe when I make them because they DO freeze so easily and everyone in my family just loves them!

1 cup creamy peanut butter
1/4 cup butter, softened
1 tsp vanilla
1 1/2 cup powdered sugar
8 oz Dark Cocoa Melting Chips

Directions:

  1. In a stand mixer with the paddle attachment, combine peanut butter and butter until completely blended (if you don’t have a stand mixer with a paddle, you can melt the peanut butter and butter for 1 minute in microwave and stir until blended.
  2. Add vanilla and powdered sugar and mix well.

  3. Divide mixture into 10 portions and form in to eggs.

  4. Place eggs on a parchment paper-lined baking sheet and place in freezer for 15 minutes.
  5. Melt chocolate wafers in microwave by heating for 30 seconds then stirring and repeating process until it is melted and smooth.
  6. Using a fork, dip egg into chocolate and flip to cover completely. Lift with fork and gently tap on edge of the bowl allowing excess chocolate to drip off.

  7. Place chocolate-covered egg back on the parchment paper.
  8. Refrigerate 10 minutes until chocolate has set.

Of all the things that I never thought I would like, this chocolate covered bacon recipe is the one that surprised me the most. I love chocolate and I like bacon, but I never thought that they went together that well.

The secret to making chocolate covered bacon come out right is getting the bacon exactly crisp but not in any way burnt. The best way to ensure that this happens is to cook your bacon in the oven (it also creates WAY less mess). You are also going to want to make sure that the bacon is completely cooled (actually – you are going to freeze it) before you start to coat the bacon with chocolate.

So when should you serve it? That’s the beauty of chocolate covered bacon. The saltiness makes it a perfect appetizer (this would be great to eat with a glass of Chardonnay, but the sweetness makes it a great dessert as well. Put this on your Easter menu and your guests will be happy campers!

  • 1 lb Thick Cut Bacon
  • 1/2 cup Semi Sweet Chocolate
  • 1 tsp Shortening
  • 1/8 cup White Chocolate

To get started, you are going to want to cook up your bacon in the oven, making sure that it is nice and crispy! Let it drain and completely cool…then you are going to want to cut the bacon strips in half and freeze it!

  • 1 lb Thick Cut Bacon

  8. Dip bacon in chocolate, shake off excess and place on wax paper.
  9. Heat white chocolate by microwaving for 30 seconds stirring and repeating until melted. Allow to cool for 2-3 minutes.
  10. Transfer white chocolate to corner of zippered bag and clip tiny piece off of corner to pipe.
  11. Pipe drizzles of white across bacon pieces.
  12. Place in refrigerator for 10 minutes to allow to set.
  13. Serve and enjoy!

I just love making bar cookies because it is an easy way to cook up a big batch at once and also because they tend to stay uniformly moist with no dried-out edges.  This mint blondie bars recipe is so easy to make and by using green mint M&M’s, it makes a perfect treat for St. Patrick’s Day!

The mint flavor in this recipe comes from using mint-flavored M&M’s.  You should be able to find them at most stores right now and even all year long (and you can always find them on Amazon or other online retailers.

Don’t like the flavor of mint?  Just replace the mint-flavored M&M’s with regular ones (or your favorite flavor).  Can’t find mint M&M’s?  Just add a little bit of mint extract (NOT peppermint extract).  Just be careful with the mint extract.  A little TRULY does go a long way!

If you are looking for a great cookie for St. Patrick’s Day, you are going to want to try this Mint Chocolate Chip Cookie recipe! They are made very much like a traditional chocolate chip cookie, you just add some green food coloring and use Dark Chocolate and Mint Baking Chips to give you all the flavor that you need!

If you can’t find the Dark Chocolate and Mint Baking Chips aat your local store, there is a very simple solution! Just replace the vanilla extract with mint extract (NOT peppermint extract) and use regular chocolate chips! You will need to adjust the amount of mint extract to your taste, so start slow replacing the vanilla, taste a little bit of the dough and then add more as you need/want it (yes – even though it has raw eggs in it. I have been eating raw cookie dough for more than 40 years and while I know that there is a chance of salmonella from eating raw eggs, but I am willing to take that chance!).

As usual, I STRONGLY suggest that you use parchment paper when you bake these cookies.  Not only does it make clean-up a breeze, but it prevents the cookies from spreading too much and they retain that nice puffy shape!

I’m not sure what the big deal is. Yes, it is delicious, creamy and minty, but making a copycat Shamrock Shake is just about one of the easiest recipes that you can make. All you need is a blender!

To make it, you will need:

  • 1 pint Vanilla Ice Cream
  • 1/2 cup Half and Half
  • 5 drops Mint Extract
  • 4 drops Green Food Coloring
  • Whipped cream & maraschino cherries (optional)

Directions:

  1. Combine ice cream, half and half, mint extract and food coloring in a blender and blend for 30 seconds to 1 minute.
  2. Top with whipped cream & maraschino cherry (optional).

White Chocolate Cheesecake Bars with Strawberry Topping

These white chocolate cheesecake bars are perfect for any occasion and chances are that you already have most of the ingredients in your pantry and refrigerator!

To make them, you will need:

24 Oreo Cookies
1 Stick of Butter Melted
9 oz White Chocolate (I used chips)
2-8 oz Packages of Cream Cheese
1/2 Cup Sugar
2-Eggs
1 Tsp. Vanilla
1/2-3/4 cup Strawberry Jam (use seedless jam if you can find it)

Making them is easy:

Simply crush up your Oreos and combine them with melted butter to make your crust. Press in to a foil-lined pan (be sure the have some of the foil hang over the sides to make lifting out easy after it is cooked)

Then just mix up your filling, spread it on top of the crust and bake! After it has cooled a bit, just spread the preserves on top of the cheesecake filling and decorate with some melted white chocolate!

  1. Preheat oven to 350
  2. Line a 8x8 baking pan with aluminum foil, leaving overhang on all sides.
  3. Add Oreo Cookies to a Food Processor or place in a ziploc bag to crush them completely.
  4. Add melted butter to cookie crumbs and combine.
  5. Press cookie mixture in to prepared pan to make a crust, covering the entire bottom of the pan evenly.
  6. In a medium bowl, mix together Cream Cheese, Sugar and Vanilla until smooth.
  7. Melt your chocolate in microwave heating and stirring in 30 second intervals until completely melted and smooth. Set aside about 1/8 cup of the melted chocolate
  8. Add the remaining melted chocolate to the cream cheese mixture.
  9. Add eggs one at a time making sure to blend well after each addition
  10. Pour mixture over crust.
  11. Bake for 30-45 minutes or until the center of your cheesecake is almost set.
  12. Let cool for 15 minutes,
  13. Spread your preserves/jam over the top of your cheesecake (you can microwave the jam for about 15 seconds to help it spread more evenly)
  14. Drizzle reserved white chocolate over your cheesecake
  15. Let chill in refrigerator for 4 hours
  16. Cut in to squares and enjoy!

Brownie Hearts with Raspberry Buttercream Filling | Valentine’s Day Idea!

These brownie hearts with raspberry buttercream filling are so easy to make and they taste just simply amazing!  Fresh raspberries can be pricey, but you can keep your costs down by using frozen raspberries.  Just make sure to thaw them completely and drain out all the excess juice!

This would be a great recipe to make with your children as well.  My children love to help make brownies and can handle a cookie cutter with no problem!  Let them help you make them and then they can take them in to school as a treat for their Valentine’s Day parties (if their school still allows sweets to be brought in – ours no longer does for most events).

To make these brownie hearts, you will need:

For the brownies:

  • 1 box 13′ x 9′ Dark Chocolate Brownie Mix + ingredients to make the brownies (see box directions)

For the Filling:

  • 1 cup Butter softened
  • 4 oz Raspberries
  • 2 cups Powdered Sugar

Making them is easy!

Simply prepare the brownies according to the box directions and allow to cool completely.  Remove the brownies from the pan (in 1 piece) and use a heart-shaped cookie cutter to cut as many heart shapes as possible.

Football Cake Pops | Game Day Food!

Looking for a last minute football party snack that you can throw together with pantry foods? Try these Football Cake Pops!

These are made the same as my Oreo Truffles recipe, except that you want to shape then in an oval before freezing.

You will need:

  • 1 package of Oreos + 1 “line” of a 2nd package of Oreos (they typically come in packages of 3 rows…you want 1 regular-size package + 1/3 of another package)
  • 1 8 oz pkg cream cheese
  • 1 bag of dark chocolate candy melts
  • Candy Melt Writer in white

Directions:

  1. Prepare mixture according to the Oreo Truffles Recipe
  2. Use a cookie scoop to portion out balls and shape with your hands in to footballs
  3. Place on a parchment-lined cookie sheet and in to the freezer to set for at least 30 minutes
  4. Remove balls from freezer and insert a popsicle stick in one end.
  5. Melt candy melts according to package directions, stirring every 30 seconds until chocolate is warm and smooth.
  6. Dip pops in to chocolate, and twirl to remove excess chocolate.
  7. Place pops on parchment-lined cookie sheet and return to the freezer until chocolate is set.
  8. Warm Candy Melt Writer according to directions.
  9. Use Candy Melt writer to pipe on lacing to the footballs.
  10. Enjoy!

How To Make Powdered Sugar

The next time you are in the middle of a recipe and run out of powdered sugar, don’t worry! If you know how to make powdered sugar, you can save yourself an emergency run to the store!

Leading up to Christmas, Wegmans had an amazing price on their store-brand sugar and I bought about 10 bags of it. Seeing as I had so much regular sugar, I saw no reason to also buy powdered sugar for my baking. I simply pulled out my Blendtec (although any good blender will do) and whipped up a few batches. I just store it in airtight canisters in my cupboards and it is ready for whenever I need it!

Powdered sugar is not simply granulated sugar that has been ground to a fine powder. Powdered sugar also also has cornstarch added to it. This helps to prevent caking during storage. If you have an allergy to cornstarch, you can omit the cornstarch, but you should use the homemade powdered sugar right away.

You will need:

  • 1 cup granulated sugar
  • 1 tsp corn starch

How To Make Powdered Sugar

  1. Place sugar and cornstarch in a blender
  2. Secure the lid tightly (place a towel over the top of your blender if you are worried about dust escaping) and blend until the sugar is a fine powder.
  3. Store in an airtight container or use immediately.

Microwave Fudge | 2 Ingredient Strawberry Fudge Recipe

It seems early to be talking about Valentine’s Day, doesn’t it? But there you go…it’s pink and you can cut it with a cookie cutter, making it perfect for heart-shaped fudge. Then again, you can really make this any time of year and cut it in any shape!

Now, I do enjoy making fudge from scratch, sometimes you want something quick and easy and this 2-ingredient microwave fudge recipe is just that. And frankly?  If I am making fudge for the kids, they can’t tell the difference between fudge made from scratch and microwave fudge!

This is a great recipe for that last-minute “Oh Mom – I forgot to tell you that I have to bring something to school for the party tomorrow!”. There is no candy thermometer needed, no worries that it will turn out wrong.  Unless you refuse to stir the chocolate every 30 seconds while you are melting it, you literally have to TRY to mess up this recipe!

To make this, you just need 2 simple ingredients:

Just melt the entire package of chocolates/candy melts in a glass bowl in the microwave, stirring every 30 seconds until complete smooth

Add in the can of frosting and stir to combine.

Chill for about 30 minutes and then either cut in to squares with a knife or use a cookie cutter to cut them in to shapes!

Microwave Fudge | 2 Ingredient Strawberry Fudge Recipe

An easy 2-ingredient microwave fudge recipe that can be customized for any holiday. Just change the color of the candy melts and/or the frosting!

Ingredients

  • 1 16oz can Strawberry Frosting
  • 1 12 oz bag White Chocolate or Vanilla Candy Melts
  • Heart shape decorations (optional)

Instructions

  1. Line an 8" x 8" pan with parchment paper or spray with cooking spray.
  2. Place candy melts in a medium bowl and place in the microwave on high for 30 seconds.
  3. Stir candy melts
  4. Continue melting candy melts in 30 second intervals, stirring after each until completely melted and smooth
  5. Immediately stir in frosting until well-mixed.
  6. Spread mixture in to the pan, smooth the top and decorate as desired
  7. Chill in the refrigerator for at least a half-hour to set.
  8. Cut into squares or use heart-shaped cookie cutter and serve.

Notes

In an 8x8 pan, the fudge will be about 5/8' thick. If you want thicker fudge, just make a double batch!

Eggnog Bread Pudding Recipe

It’s a new year which means that it is pretty much the end of “Egg Nog Season” but you can still find it at many stores for a few more weeks.  If, like me, you love the taste of egg nog but your stomach can’t really stand the richness of it as a drink, you are  absolutely going to love my eggnog bread pudding recipe.

Sweet enough to be a dessert (especially with the vanilla sauce) or simple enough for a weekend breakfast (just dust with some powdered sugar), this is a great way to use up that leftover egg nog (or if you are an egg-nog-aholic, you can always make my easy egg nog recipe and have it year-round).

One of the keys to my eggnog bread pudding recipe is the bread.  Growing up, my mother always made homemade challah bread and used it for making french toast, bread puddings and more.  I am lucky that I can usually find challah at the grocery store (until I start making it myself), so that is what I use.  If you can’t find or make challah bread, you can always use French bread or, in a pinch, even just “regular” bread!

If what you want is a nice custard-like bread pudding, you will want to make sure that, once you combine your ingredients, you let the liquid really soak in to the bread. I mix it up in a large bowl and let it sit for about 15 minutes, stirring/tossing the bread every few minutes. Once there is very little liquid sitting in the bottom of the bowl, you are ready to spoon them in to the ramekins.

I like making these in ramekins so that it makes for a pretty presentation, but you can always just bake it in a 9″x13″ baking dish. If you make it in a baking dish, you will just need to add a few minutes to the cooking time to make sure that the center is completely set.

  • 1 loaf (1 lb) challah bread, cut in to cubes
  • 8 eggs, beaten
  • 2 1/2 cups half & half
  • 1 1/2 cups eggnog (store-bought or you can make your own eggnog)
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 1/2 tsp nutmeg
  • dash of salt
  • 2 Tbsp dark rum (or 3 Tbsp rum extract)
  • 1 tsp vanilla extract

Ingredients

    For the Eggnog Bread Pudding Recipe
  • 1 loaf (1 lb) challah bread, cut in to cubes
  • 8 eggs, beaten
  • 2 1/2 cups half & half
  • 1 1/2 cups eggnog (store-bought or you can make your own eggnog)
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 1/2 tsp nutmeg
  • dash of salt
  • 2 Tbsp dark rum (or 3 Tbsp rum extract)
  • 1 tsp vanilla extract
  • 1 1/2 cups golden raisins
  • For the Vanilla Sauce
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup heavy whipping cream
  • 1 Tbsp vanilla

Instructions

    To make the Eggnog Bread Pudding
  1. Preheat oven to 350 F. Butter 8 ramekins or a 9"x13" baking dish
  2. Place cubed bread in a large bowl
  3. In another bowl, whisk together all other ingredients except the raisins. Pour mixture over bread cubes and stir to combine.
  4. Add raisins and stir well.
  5. Allow mixture to sit for 10 - 15 minutes, stirring often until most of the liquid is absorbed in the to bread.
  6. Spoon mixture in to prepared ramekins or baking dish. Place ramekins (or baking dish) on a cookie sheet and place in the oven.
  7. Cook for about 40 - 45 minutes (50 - 55 minutes if using a baking dish) until pudding is completely set and starting to brown on the top.
  8. Remove from oven and allow to cool.
  9. Top with powdered sugar or vanilla sauce
  10. Vanilla Sauce Recipe
  11. Combine all ingredients except vanilla in saucepan or non-stick skillet.
  12. Cook over medium heat, stirring often, 5-8 minutes or until mixture thickens and comes to a full boil
  13. Stir in vanilla
  14. Cool slightly and pour over bread puddings

Chocolate Peppermint Fudge | Christmas Cookie Idea

So if you haven’t been able to tell, I have a things for Christmas Cookie recipes. I also have a thing for the combination of chocolate and peppermint (have you tried my Oreo Peppermint Cookie Balls yet?) If you need a last-minute treat to take to a party or send in to school with your children, this Peppermint chocolate fudge needs only a few ingredients and takes longer to cool than it does to make!

Microwave Chocolate Peppermint Fudge

Ingredients:
(2) 14 oz Packages of Semi-Sweet Chocolate Chips
1 1/2 Cans Condensed Milk (21 oz)
1 Tsp Peppermint Extract
3 Candy Canes

Directions:
Chop candy canes in a food processor or crush inside of plastic bag
Combine chocolate chips, condensed milk and peppermint extract in a large bowl
Microwave for 1 minute and then stir
Return to microwave for an additional 1 minute
Mix until smooth
Pour mixture into a greased 8X8 pan
Top with candy cane pieces
Refrigerate for 1 hour

One thing that I like to do: when you chop the candy canes, you will likely have some “candy cane dust” mixed in with the chunks. Simply blend the dust in with fudge before pouring it in to the pan. It just gives it a little more peppermint flavor! This is also a good way to get the flavor in to the fudge if you don’t have peppermint extract and don’t want to go out and buy it!
