Snowman Truffles | Christmas Cookie Idea!

Ok – I admit it – I have kind of a “thing” for truffles (make sure that you try my Peppermint Oreo Cookie Balls!). They are just the perfect portion-size when you want something sweet and they are always the first thing to go on any cookie tray that I make. I also enjoy making them look as nice or as fun as I can, and these snowman truffles are just too good not to share with you!

To make them, you will need:

  • 12 White Chocolate Truffles (or you can make my Oreo Truffles, covered in white chocolate)
  • 1/4 cup White Candy Melts
  • 1/4 cup Black Candy Melts
  • 3 Orange Starburst candies
  • 12 Hershey Hugs
  • 6 Mini Oreos separated into 2 cookies with filling removed
  • 12 Rolos
  • 1 Red Fruit by the Foot
  • 1 Blue or Green Fruit by the Foot

Directions:

  1. Heat White Candy Chips in small bowl by microwaving for 30 seconds stirring and repeating until melted. Dip bottom of truffle in white chocolate and place on wax paper. Allow to set. Dip bottom of truffle in white chocolate a second time to help create a lip around bottom and place on wax paper. Allow to set. (if you are using my Oreo Truffles recipe, you can skip this part because your truffle will probably already have a flat “base”)
  2. Cut Fruit by the Foot into 5-6″ lengths and then cut each in half lengthwise (to make scarves).
  3. Cut Starburst into thirds. Then cut each of these diagonally and roll with fingers to form carrot noses. Repeat.
  4. Dip end or carrot noses in white chocolate and place on truffles.
  5. Heat Black Candy Chips in small bowl by microwaving for 30 seconds stirring and repeating until melted.
  6. Use a toothpick to paint on dots for eyes and mouth. Allow to set.
  7. Insert toothpicks in the large end of Rolos and set in freezer for 10 minutes.
  8. Dip Oreo halves in black chocolate and set on wax paper.
  9. Dip Rolos in black chocolate and rotate and gently shake off excess and place on top of Oreos. Allow to set.
  10. Place a small amount of white chocolate on top of truffle and place “hat” on top of truffle.
  11. Place in refrigerator for 10 minutes to set.
  12. Wrap a scarf around each truffle overlapping material.
  13. Gently remove toothpick from top of hat and use end of toothpick dipped in black chocolate to cover hole.

Fried Apples Recipe | Copycat Cracker Barrel Recipe

I just love the fried apples at Cracker Barrel, but not only do I not really have a Cracker Barrel near me, the entire place is just a huge “danger zone” for me. Between the gift store and all the delicious foods, I could spend a small fortune in money and calories there!

But I do like to have some indulgences once in a while and I wanted a fried apples recipe that would come pretty close to the Cracker Barrel recipe and I think this is it!

This fried apples recipe makes a great side dish for almost any pork recipe (there is just something about pork & apples that just works!) or you can use this recipe in place of canned apple pie filling in my caramel apple cheesecake recipe or would make a great topping for French Toast

You will need:

  • 8 medium Granny Smith apples, peeled, cored and sliced
  • 3 tbsp freshly juiced lemon juice
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg

Instructions:

  1. Toss apples with lemon juice to coat. This will help prevent browning.
  2. Melt butter in a heavy skillet. Add apples, brown sugar, cinnamon and nutmeg.
  3. Stir and cook until bubbling.
  4. Reduce heat, cover and cook until apples are tender.
  5. Serve and enjoy!

Rice Krispie Treats Recipe | Rudolph The Red Nosed Reindeer

Who doesn’t love a great Rice Krispie treats recipe? This one is made with Cocoa Krispies and now only will it be a crowd-pleaser, it is simple enough that you can make it with your children!

To make the antlers, you will need to Wilton Harvest 6 Piece Mini Metal Cookie Cutter Set, but you can probably still easily pick this up at your local AC Moore, Michael’s, etc. Target and Walmart may even have it in their seasonal sections!

You will need:

INGREDIENTS

  • 3 tbsp Butter
  • 6 cups Cocoa Krispies Cereal
  • 10 oz Marshmallows
  • 12 candy eyes
  • 18 Kraft caramels
  • 6 Red Candy Decorations (you can use red M&M’s – just when you place them, put the “logo side” facing down)

DIRECTIONS

  1. In a medium to large saucepan, melt butter over low heat.
  2. Add the marshmallows and stir until completely melted.
  3. Remove from heat.
  4. Add Cocoa Crispies cereal and stir until cereal is well coated.
  5. Prepare a 9 x 9 pan by spraying with cooking spray or coating with butter.
  6. Butter a spoon or your hands or use wax paper to press the mixture evenly in to the pan. Let cool.  cocoa rice krispie treats recipe
  7. After cooling, cut into rectangles or squares.
  8. Heat a caramel for 8 seconds.
  9. Pour caramel on to wax paper, place another sheet of wax paper on top of it and roll it large enough to use leaf cookie cutter. Allow to cool slightly.
  10. Cut antler with leaf cookie cutter and place on treat  cutting caramel antlers
  11. Repeat for other antler.
  12. Roll another caramel into a round to make face.
  13. Place eyes and nose.
  14. Repeat for other treats.

Note: If you can work quickly, you can do the antlers in a batch of several at once. Just melt several caramels and roll them out, allow to cool and cut with the cookie cutter. The excess caramel can easily be remelted!

Minecraft Ghasts Pops | Minecraft Party Food

Did you have a chance to make my Minecraft Pig Pops?  They are so easy to make and the kids will love them!  Here is another Minecraft Party Food – Minecraft Ghasts Pops make with Snickers!

If you don’t like Snickers, you can always make them with any square candy or even with brownies cut in to a square (or bake them in this brownie bites mold).  Just make sure to freeze the brownies for at least 30 minutes once they are cut and you have inserted the stick.  Otherwise, they will fall apart when you go to coat them with chocolate

Supplies

Directions

  1. Remove all of the wrappers from the snickers minis.
  2. Push the pop stick most the way through the Snicker mini, but not all the way. Don’t worry if it cracks a little. You can push it back together and it will be cover with the melts.  snickers stick
  3. Grab a small dish that is safe to use in the microwave. Melt the white candy melts using the directions on the package.
  4. To coat the Snickers. Use a spoon or the flat side of a butter knife to frost on the melted candy on to the Snickers.  coating ghasts
  5. Give the whole piece a light coating, then place upright in a glass and allow to dry/harden.
  6. After hardened, give it a second coat just like the first.
  7. Use another microwavable safe dish to melt just a few chips of the black.
  8. We will use a toothpick to now paint on the face. On the flattest side of the coated Snickers, paint on a small dash at the bottom center. Then do two small dashes at the top. Leave a little gap between those and the top. Now from those two upper dashes, draw a line straight down from each one, on the end close to the middle. Under those lines, leave a little gap and then paint a small box.  painting ghasts
  9. Take a small amount of the melted white and a dot of the melted black and mix them together. Paint a small line on the inside of the black line that drips down from the eyes.

And that’s it! You have a great Minecraft Party Idea, or even just a fun treat to surprise your Minecraft-lover when he or she gets home from school!

Easy Chocolate Pie Recipe | Made With Dark Chocolate Cocoa Powder!

Chocolate pie is such an indulgence and this easy chocolate pie recipe is made more decadent by using Hershey’s Special Dark Chocolate Cocoa Powder (which also accounts for the darker color)! Of course, you can use just “regular” cocoa powder, but I find that using the dark chocolate cocoa powder eliminates some of the “super-sweetness” of traditional chocolate pies. It is still an incredibly rich pie (especially when you top it with my whipped cream recipe and chocolate chips or chocolate shavings!). This pie will be a great addition to any holiday table or even just a sweet treat for your family!

Now – before you say it, yes – a chocolate pie recipe can be easy without using instant pie filling. It really doesn’t take that much more time (especially if you think “cook ‘n serve” pie filling is “home cooking’ – it’s just as easy as that!) and with my recipe, you know exactly what is going in to your pie!

Ok – lets get to my Easy Chocolate Pie Recipe!

Ingredients:

  • 1 pie crust, baked and cooled according to directions (buy frozen, refrigerated or make your own pie crust)
  • 1/2 cup Hershey’s Dark Cocoa Powder (or use regular cocoa powder)
  • 1 1/4 cup sugar (a little less if you are using regular cocoa powder)
  • 1/3 cup cornstarch
  • 1 tsp salt
  • 3 cups milk
  • 3 Tbsp butter
  • 1 1/2 tsp pure vanilla extract

Instructions:

  1. In a medium saucepan, mix together cocoa powder, sugar, cornstarch, salt and milk. Whisk until smooth.
  2. Cook over Medium-High Heat, stirring often until milk starts to heat. Once the milk starts to warm, stir constantly, making sure to scrape sides and bottom of pan.
  3. Bring to a boil, stirring constantly
  4. Let mixture actively boil for 1 minute, continuing to stir.
  5. Remove from heat and stir in butter and vanilla. Whisk to blend
  6. Pour in to cooled and baked 9″ pie crust
  7. Cover with plastic wrap, making sure that entire surface of the filling is covered (this will prevent the filling developing a “skin” as it cools)
  8. Chill in the refrigerator 4 – 6 hours or until firm.
  9. Top with whipped cream and chocolate shavings or mini chocolate chips

Whipped Cream Recipe | Homemade Whipped Cream!

A whipped cream recipe seems like such a basic recipe to have, but you would be surprised at how many people have a problem making it, or think that it is too much of a bother to make! But trust me, once you start making homemade whipped cream, you won’t ever want to go back to buying the pre-made stuff in the refrigerator or the freezer section of your grocery store!

I grew up on homemade whipped cream  (my mom would never buy the store-bought stuff) and there are a few tips that my mom always told me when it comes to making it that make all the difference in the world:

  1. Chill your beaters, bowl and cream in the freezer for at least 15 minutes before making this. Having everything chilled can be the difference between your whipped cream recipe being done in just a few minutes, or taking 10 minutes.
  2. Never overwhip your cream. There is a critical time when your cream will go from soft peaks to butter (or a “grainy consistency”). This will happen even faster if you have chilled everything in advance.  Just keep an eye on your cream while it whipping and stop as soon as it hits the soft peak stage!

To make homemade whipped cream, you will just need a few simple ingredients:

  • 1 cup heavy cream
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract

No-Bake Cranberry Cheesecake Recipe (Recipes In a Jar)

If you are looking for a fun dessert for your Thanksgiving table, this cranberry cheesecake recipe is for you! It’s easy to make, portion-controlled and will just look so cute on any dessert table! Make a few of these as well as a few of my caramel apple cheesecake and set them out on the dessert table and your guests will love having the choice!

To make them, you will need:

  • 6 8 oz Mason Jars
  • 8 oz Cream Cheese
  • 8 oz Heavy Whipping Cream
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Lemon juice
  • 1/2 cup Sugar
  • 2 cups crushed Graham Crackers
  • 3 tbsp butter
  • 1 cup Jellied Whole Cranberries (or you can use my cranberry sauce recipe and drain any excess juice)
  • Lemon peel, for garnish (score the lemon using one of these)

DIRECTIONS

  1. Beat together cream cheese, lemon juice, vanilla and sugar until creamy.
  2. In a large bowl whip the heavy cream until peaks form.
  3. Fold whipped cream into cream cheese mixture.
  4. Transfer to the corner a large zippered bag and cut off corner for piping into jars.  pipe cheesecake
  5. Melt butter and add to crushed graham crackers.
  6. Place a layer of crushed graham crackers in the bottom of each jar and tamp down.  tamp down crumbs
  7. Pipe in cheese cake mixture into each jar.
  8. Gently tap jar to get mixture to settle and level.
  9. Wipe down any streaks above the level of the mixture with damp paper towel.
  10. Add a layer of cranberries to each jar.  top with cranberries
  11. Garnish with strips of lemon peel
  12. Decorate jar

And that’s it! This would be really pretty on your Thanksgiving table or any dinner party in the fall! The tartness of the cranberries combined with the sweetness of the cheesecake makes for a perfect dessert!

Minecraft Pig Pops | Minecraft Party Ideas

Minecraft Pig Pops
Minecraft has pretty much swept the nation (the world?) and if you are looking for some Minecraft party ideas, these Minecraft Pig Pops can be a great treat to serve your guests!

Snickers Pig Minecraft Pops

Supplies

Directions

  1. Unwrap Bite-Sized Snickers. Push the lollipop sticks almost all the way through the Snickers.  snickers stick
  2. In a small size microwavable dish, melt about ½ cup pink candy melts according to the directions on the bag.
  3. You can just dip the Snicker into the melted candy, but I have found you get a smoother surface by using the back of a spoon of the flat side of a butter knife to smooth it over the Snickers.  coating-snickers
  4. Coat all sides lightly and allow to harden, by placing them upright in a glass, so they are not touching anything.
  5. After the pink coating has hardened, give them a second coat just like the first to be sure to cover any remaining brown that is showing. Again place upright in a glass and allow to harden.
  6. In another microwavable dish, melt a spoon full of the pink candy melts along with a 2 chips of brown.
  7. Using a toothpick paint a rectangle in the center of the flattest side.  painting-pops
  8. Melt a few chips of the white.
  9. Use another toothpick to paint on the white part of the eyes. Start at the top edges of the nose and make a small square.  painting pops 2
  10. Now melt a chip or two of the brown and make two small squares on each end of the rectangle nose.
  11. Melt a few chips of black and with another toothpick make a small square on the outside of the white eyes.  painted pig pops
  12. Allow all candy to harden and serve!

And that’s it! They may not look like much to us grown-ups, but believe me, if you have a Minecraft fan in your house and you are looking for some Minecraft party ideas, they will instantly recognize these Minecraft Pig Pops!

Hot Chocolate Marshmallow Pops

Hot Chocolate Marshmallow Pops

Marshmallow pops seem to getting more and more popular these days.  They seem to be popping up (no pun intended) everywhere.  I was in the teachers lounge of my daughters school last week (for her Brownie meeting) and they had had a baby shower for one of the teachers and had left behind the extra pops!  They were so cute (she is obviously having a boy, because they were coated in blue chocolate and clear sanding sugar)

They are cute (or pretty, depending on how you decorate them), the perfect size when you just want a little something sweet and look like they took WAY more time to make than they actually do!

These Hot Chocolate Marshmallow Pops can be a fun project to make with the kids and a nice treat to send in to school for any Holiday parties that your children might be having at school (assuming their school still allows sweets to be brought in for parties).

To make them, you will need:

INGREDIENTS

  • 6 Regular Marshmallows
  • 1/2 cup Milk Chocolate Morsels
  • 1/4 cup Marshmallow Bits (you can usually find these in the grocery store either near the hot chocolate or with the ice cream toppings)
  • 6 Straws/Sticks

DIRECTIONS

  1. Heat Chocolate Morsels by microwaving for 30 seconds stirring and repeating until melted. Allow to cool for 2-3 minutes.
  2. Insert straw/stick in each marshmallow.
  3. Dip marshmallow in melted chocolate and roll to coat completely.  coating-marshmallows
  4. Sprinkle Marshmallow Bits over top of candy coated marshmallow and lay on wax paper.
  5. Immediately place in refrigerator for 10 minutes to set candy mix.

Caramel Apple Cupcake with Caramel Cream Cheese Frosting

If you are looking for a fall dessert idea, look no farther than these Caramel Apple Cupcakes! It combines your favorite fall flavors with the fun of cupcakes!

For the frosting and drizzle, you can either use store-bought caramel, or you can use my homemade caramel sauce recipe.

Caramel Apple Cupcake with Caramel Cream Cheese Frosting

For the cupcakes:

  • 1 1/2 cups very finely chopped apples
  • 1 package yellow cake mix (18.25 oz)
  • 1 package vanilla instant pudding mix (3.4oz)
  • 3/4 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs

For the frosting:

  • 8 ounces cream cheese, softened
  • 4 tablespoons butter, softened
  • 1/2 cup caramel sauce
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • additional Caramel Sauce, for drizzling

Instructions:

  1. Preheat oven to 350F. Line cupcake tin and set aside.
  2. Using a food processor, finely chop the apples.
  3. Combine the cake mix, pudding mix, chopped apples, water, oil, and eggs in a mixing bowl. Using electrix mixen, beat for about 2 minutes.
  4. Spoon 1/4 cup batter into each lined muffin cup.
  5. Bake for 18 minutes or until toothpick comes out clean.
  6. Cool completely before frosting!

To make the frosting:

  1. Beat cream cheese and butter until smooth. Add caramel sauce, vanilla, and powdered sugar. Beat on low speed until blended. If mixture is too thick, add a little milk. If mixture is not thick enough, add more powdered sugar.
  2. Frost cupcakes
  3. Drizzle cupcakes with caramel sauce.

Mini Lemon Meringue Pie Recipe

If you will be baking this year for any holiday dinners (or just want another easy dessert for your family), this lemon meringue pie recipe is sure to be a crowd-pleaser! Mini desserts are so popular right now and this mini pie pan can be used to make so many of your favorite desserts in smaller form. You can even use it with your favorite quiche recipe!

I have sort of a love-hate relationship with my lemon meringue pie recipe. I love that it is so easy, but I hate that it uses a pudding mix. It is a long-running joke in my family that I seem to be incapable of making lemon-meringue pie from scratch. For some reason, so matter what recipe I try, the filling never seems to set properly and it is always running all over the place. At least with this recipe, you know the filling will set up properly!

Anyway, to make it, you will need:

INGREDIENTS

  • 1 Package Ready made Pie Crusts (or you can make your own)
  • 1 Package Lemon Pudding and Pie Filling
  • 1 3/4 cups cold Milk
  • 3 Egg Whites
  • 1/8 tsp Cream of Tartar
  • 1/8 cup sugar

DIRECTIONS

  1. Cut two 5 1/4″ circles from one of the crusts and insert in pans (use enclosed cutter from your mini pie pan)
  2. Bake at 400 degrees for about 10 minutes.
  3. Allow to cool before removing.
  4. Add Lemon pudding pix and milk to medium bowl.
  5. Mix for 1 minute.
  6. Fill pie crust with Pie filling.
  7. Place 3 egg whites in a bowl and whip until peaks form.
  8. Slowly add sugar and cream of tartar.
  9. Top pie with meringue making sure it touches crust.
  10. Bake at 400 degrees for about 10 minutes. Be careful not to burn the meringue!
  11. Allow to cool before removing.

  6. Fill pie crust with Pie filling.
  7. Place 3 egg whites in a bowl and whip until peaks form.
  8. Slowly add sugar and cream of tartar.
  9. Top pie with meringue making sure it touches crust.
  10. Bake at 400 degrees for about 10 minutes.
  11. Allow to cool before removing.

I love recipes in a jar – they just look so rustic! This no-bake caramel apple cheesecake recipe is a great recipe to make for a quick weeknight dessert, or when you want to have something different on your holiday table!

INGREDIENTS

  • 6 8 oz Mason Jars
  • 8 oz Cream Cheese
  • 8 oz Heavy Whipping Cream
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Lemon juice
  • 1/2 cup Sugar
  • 2 cups crushed Graham Crackers
  • 3 tbsp butter
  • 1 cup Apple pie filling (or you could use my Fried Apples Recipe)
  • store-bought Caramel topping (or use my apple caramel dip recipe)

DIRECTIONS

  1. Beat together cream cheese, lemon juice, vanilla and sugar until creamy.
  2. In a large bowl whip the heavy cream until peaks form.
  3. Fold whipped cream into cream cheese mixture.
  4. Transfer to the corner a large zippered bag and cut off corner for piping into jars.
  5. Melt butter and add to crushed graham crackers.
  6. Place a layer of crushed graham crackers in the bottom of each jar and tamp down.  IMG_1908
  7. Pipe in cheese cake mixture into each jar.
  8. Gently tap jar to get mixture to settle and level.
  9. Wipe down any streaks above the level of the mixture with damp paper towel.  IMG_1915
  10. Add a layer of apples to each jar.
  11. Pipe a small dollop of whipped cream of cheesecake mixture on top and drizzle with caramel topping.
  12. Decorate jar.
