Patriotic Poke Cake

Still searching for a last minute dessert to make for the 4th of July? Here’s a Patriotic Poke Cake recipe that’s simple, looks good, and uses ingredients in your pantry!

For the cake:

  • 1 box (18 oz.) white cake mix (also eggs, oil and water
  • called for on the box)
  • 2 cups boiling water
  • 2 pkg. (3 oz. each) red jello (any flavor)

For the frosting:

  • 1/2 cup butter, softened
  • 2 tsp. vanilla extract
  • 3-3/4 cup powdered sugar
  • 3-4 tbsp. milk
  • blue food coloring, (I prefer the 1 oz. bottle made by Wilton)
  • Patriotic colored sprinkles

Patriotic Marshmallow Pops

Want to throw together a red, white, and blue treat? These are so simple!

  • Marshmallows
  • Lollipop Sticks
  • White Almond Bark
  • Red & Blue Sprinkles
  • A box, flowerpot or other fun container
  • Styrofoam (to hold the sticks)
  • 1-2 bags of Red Hots (for sprinkling over the styrofoam)

Strawberry Blueberry Mini Cheesecake Trifle

Looking for a special dessert for your 4th of July picnic or party? This recipe looks really neat and something a little out of the ordinary. The fruit and yogurt would be a nice refreshing treat if the day turns out to be a warm one!

Graham Cracker Crumble

  • 1 1/2 cups graham cracker crumbs (about 10 full sized crackers)
  • 1/3 cup butter, melted
  • 1 Tablespoon sugar

Fluffy Cheesecake

  • 1- 8oz block cream cheese
  • 1/2 cup powdered sugar
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons milk (any fat content)
  • 2 cups cool whip, or freshly whipped cream

Weight Watchers Friendly Carrot Cake Recipe: Just 4 Points Per Slice!

Oh – I love carrot cake and if you are looking for a lower calorie and fat version of a holiday classic – this is your recipe!

You will need:

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 2 tsp baking soda
  • 1 tsp salt
  • 1/2 cup raisins
  • 1/2 cup egg substitute
  • 2 egg whites
  • 2 1/2 cups shredded carrots
  • 1/2 cup applesauce
  • 1/3 cup canola oil
  • 12 oz fat free cream cheese
  • 3 tbsp hot water
  • 1 7 oz jar of marshmallow creme
  • 1 tsp vanilla extract
