Quinoa and Mango Salad With Edamame
This quinoa and mango salad with edamame is so easy to make and can easily be customized just by changing the flavor of the salsa you use!
  • 2 cups cooked quinoa, slightly cooled
  • 1 cup frozen shelled edamame (more to taste)
  • 1 cup fresh mango salsa
  1. Cook quinoa according to package directions. Cool slightly.
  2. Add the edamame to the quinoa and toss, letting the heat of the quinoa thaw the edamame (which will also cool down the quinoa)
  3. When completely cool, add the mango salsa to the mixture and stir to combine
  4. Serve and enjoy!
