I can’t get enough of these summertime pie recipes. They look so yummy and are so easy to make! For this Oreo Pie you need:

  • 3 Tbsp. butter or margarine, melted
  • 1 qt. (4 cups) coffee ice cream, softened
  • 1 cup hot fudge ice cream topping

No Bake Chocolate Truffle Pie

My goodness this pie looks amazing. Can you see the caramel oozing out of the bottom? You don’t even have to turn on the oven for this one but you will need to gather:

  • 1/2 cup(s) pecans, toasted and coarsely chopped
  • 1  (6 oz) ready-to-fill chocolate-flavored crumb crust
  • 17  squares individually wrapped caramels, unwrapped
  • 1/4 cup(s) canned evaporated milk (not sweetened condensed)
  • 1 1/2 cup(s) semisweet chocolate chips
  • 1 cup(s) heavy cream
  • 3 tablespoon(s) unsalted butter
  •  Whipped cream, for serving

It’s the time of year when strawberries are in season! This Strawberry Pie looks fantasic and very summery. to make it you need:

  • 2 cups flour
  • 1 teaspoons salt
  • 3/8 cup cold shortening or lard
  • 3/8 cup cold butter, chopped
  • 3-4 tablespoons cold water
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1 egg, slightly beaten
  • 1/2 cup whipping cream
  • 1 teaspoon vanilla extract
  • 1/2 cup sliced almonds
  • 1 1/2 cups fresh strawberries
  • 1/2 cup water
  • 1/4 cup sugar
  • 2 teaspoons cornstarch

Kentucky Derby Bars

Can you ever have enough bar recipes? Probably not ;) Here’s a new one that’s a little different for these Kentucky Derby Bars. You’ll need:

  • 1 package graham crackers, crushed (2 cups crumbs)
  • 5 tablespoons of butter
  • 1 cup sugar
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1/2 cup (1 stick) butter, melted
  • 1 teaspoon cinnamon
  • 3/4 teaspoon cayenne pepper
  • 1 teaspoon vanilla
  • 1 cup shelled pecans (or walnuts), chopped
  • 1 cup chocolate chips

Crockpot Rocky Road Cake

I love making meals in my crockpot, just throw in the ingredients and forget about it! This recipe is even better though because it’s dessert that you can throw together and not have to worry about cooking! To make this cake you need:
  • 1 (18.25-oz.) package German chocolate cake mix
  • 1 (3.9-oz.) package chocolate instant pudding mix
  • 3 large eggs, lightly beaten
  • 1 cup sour cream
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla extract
  • 3 1/4 cups milk, divided
  • 1 (3.4-oz.) package chocolate cook-and-serve pudding mix
  • 1/2 cup chopped pecans
  • 1 1/2 cups miniature marshmallows
  • 1 cup semisweet chocolate morsels
  • Vanilla ice cream (optional)
