Prepare your favorite biscuits according to their recipe or package directions.
In a large skillet, cook sausage, breaking it up in to bite size pieces as it cooks.
Remove sausage from pan, leaving at least 4 – 5 tablespoon grease in the pan. DO NOT discard the grease!
Add butter to the grease (more if you used very lean sausage and don’t have enough grease from the meat)
Add flour to drippings and butter. Whisk until all lumps are gone and the mixture is smooth.
Cook flour/butter/grease mixture, whisking constantly, for about 2 minutes (this “cooks” the flour so that you won’t taste the flour in the gravy)
Slowly add milk, stirring constantly until proper consistency is reached.
Return sausage to the gravy mixture and cook for another few minutes until heated through. If the gravy seems too thick, add a little more milk.
Add Salt and pepper to taste.
Serve gravy over biscuits.
