Have some garden bounty that needs to be used up? This Cheesy Squash and Tomato Casserole might do just the trick! To make it you need:
- 4 slices of bacon (cooked crisp)
- 3 to 4 small to medium summer squash (sliced about ¼” thick)
- 1 Vidalia or other sweet onion, (coarsely chopped)
- 2 to 3 tomatoes
- Garlic salt
- Kosher salt and freshly cracked black pepper
- 2 cups of shredded cheddar
- Olive oil, to drizzle
- Fresh basil, for garnish, (optional)
