Another great summer, refreshing summer recipe! This Quinoa, Red Pepper, and Cucumber Salad With Avocado and Lime combines all kinds of fresh summer veggies. To make it you need:
- Kosher salt
- 1 cup quinoa
- 1 garlic clove, pounded to a smooth paste with a pinch of salt
- 1 large shallot, finely diced
- 1 jalapeño, seeded and finely diced
- 3 and ½ tablespoons fresh-squeezed lime juice, plus more as needed
- ½ cup and 2 tablespoons extra-virgin olive oil
- 1 medium red pepper, halved, seeded, and finely diced
- 1 small- to medium-sized cucumber, peeled and seeded, if necessary, and cut into ¼-inch dice (about 1 cup)
- ½ cup roughly chopped fresh cilantro, plus sprigs for garnish
- 2 to 3 ripe avocados, sliced
