I know that many people think of Jell-O as some funky remnant from the 1970s, but sometimes I just really like it. It's fun, it's easy and there is one other thing - when I went on a "Jell-O kick" a few years ago and was eating it about 5 times per week, my hair and nails never looked better!
But kids don't eat Jell-O because they want naturally long nails - they eat it because it is different and fun! Well - let's make it even more fun and more different and let them "taste the rainbow" (yeah - I know that is a slogan for another product, but it just fits!)
Of course, you can go boring and just make a single-color Jell-O, but why not make it fun? These Rainbow Jell-O squares are sure to get squeals of glee for children and adults alike! Serve them for St. Patrick's Day or any other holiday or party! You will need:
- 1 box Red Gelatin
- 1 box Orange Gelatin
- 1 box Yellow Gelatin
- 1 box Green Gelatin
- 1 box Blue Gelatin
- 1 8 oz container of Cool Whip

Rainbow Jello Squares Recipe

These Rainbow Jell-O squares are sure to get squeals of glee from children and adults alike! Serve them for St. Patrick's Day or any other holiday or party!
Yield - 18 servings
Preparation Time - 2 minutes
Chilling Time - 4 - 5 hours
Ingredients
- 1 box Red Gelatin
- 1 box Orange Gelatin
- 1 box Yellow Gelatin
- 1 box Green Gelatin
- 1 box Blue Gelatin
- 1 8 oz container Cool Whip
Directions
- Spray an 11" x 13" pan with cooking spray.
- Add 1 cup boiling water to package of blue Jell-O. Stir until dissolved.
- Pour ⅔ cup gelatin into pan and place in refrigerator to set for about 20 minutes or until slightly firm.
- Add Cool Whip to remaining mixture to bring level up to ⅔ cup. Stir until Cool Whip melts and color is blended.
- Gently pour on top of set gelatin and place in refrigerator to set for about 15 - 20 minutes (it needs to be firm enough for another layer to be added on top, without breaking the "color line".
- Repeat this process with green, yellow, orange and red gelatin.
- Allow to set for 2 hours before cutting and serving.
