Fruit Salsa With Cinnamon Chips


Salsa is the perfect snack this time of year and you can change up your normal salsa snack by making this Fruit Salsa! You need:

  • 2 kiwis, peeled and diced
  • 2 Golden Delicious apples – peeled, cored and diced
  • 8 ounces raspberries
  • 1 (16 oz) carton of strawberries, diced
  • 2 tablespoons white sugar (more or less to taste)
  • 1 tablespoon brown sugar (more or less to taste)
  • 3 tablespoons fruit preserves, any flavor (I used strawberry)
  • 10 (10 inch) flour tortillas
  • melted butter or butter flavored cooking spray

Strawberry Lime Popsicle Recipe

5 Minute Coffee Cup Cake


Want a snack but don’t really want to make anything or heat up the oven? Try this recipe for 5 Minute Coffee Cup Cake! To make this you will need:

  • 1 standard 10 oz coffee cup
  • 1/2 stick (4 TBS/ 57 grams) butter
  • 1/4 cup cocoa
  • 1 tsp instant coffee or espresso powder
  • 1/4 cup packed light brown sugar
  • 1 Tbs mayonnaise, light mayo works too
  • 1 egg 1 pinch salt
  • 1/8 tsp vanilla extract
  • 2 Tbs flour
  • 1 handful bittersweet chocolate chips

Here’s a fun and easy treat you can make for your 4th of July celebration this year! To put together these 4th of July Marshmallow Pops you will need:

  • Red Jell-O 6 oz Box (Strawberry, Cherry or Raspberry)
  • Blue Jell-O 6 oz Box (Berry Blue)
  • (1) Bag of Large Marshmallows
  • Popsicle Sticks
  • 2 Gallon Size Ziploc Bags (or sandwich bags for smaller quantity)

Homemade Protein Bars


Now that summer is here and we are on the go more often than normal, a good Homemade Protein Bars recipe is a must because who likes the flavor of those store bought protein bars? To make these you will need:

  • 1 mashed banana
  • 1 1/2 cups dry oatmeal
  • 2 Tablespoons flax seed, ground
  • 2-4 scoops protein powder
  • 1/4 cup peanut butter
  • 1/4 cup shredded coconut
  • 1/4 cup coconut oil or butter, melted
  • 1/4 cup raisins
  • 1/4 cup water
  • 1 large chocolate bar  or 1/2 cup chocolate chips

Here’s a recipe that I haven’t seen anything like it before. These Cream Cheese Roll Ups would make a fun dessert, fancy snack, or a sweet addition to a brunch. To make them all you need is:

  • 1 loaf (16 ounces) thinly sliced white bread, crusts removed
  • 1 package (8 ounces) cream cheese, softened
  • 3/4 cup confectioners sugar
  • 1 cup sugar
  • 1-1/2 teaspoon ground cinnamon
  • 3/4 cup butter, melted

Strawberry Cheesecake Popsicles


Don’t these look amazing? I think these Strawberry Cheesecake Popsicles would make a great cold summer snacks. To make them you need:

  • 8 ounces cream cheese
  • ¼ cup sour cream
  • 3/4 cup powdered sugar
  • 1/3 cup whole milk
  • 6 large fresh strawberries, chopped or ¾ cup frozen strawberries
  • 6 standard sized graham crackers
  • 1 tbs melted butter
