We are going through these muffins like crazy in my house. I only eat one a day, but my children adore them. And the way I figure it, it may be "cake", but at least it is "veggie cake"
Pumpkin Muffins:
1 can (15oz) canned pumpkin (not pumpkin pie filling)
1 spice cake mix
½ cup water
Mix together and spoon into greased cupcake pans or silicone liners (do not use paper liners). Bake at 350 for about 20-25 minutes. Makes 12 large muffins
To me, this is just an ultimate "comfort food"! I've been told that it is equally good if you use one of those low-fat chocolate cake mixes and especially with the Fat-free Krusteaz cranberry muffin mix, but I have not tried either of them yet
