Menu Plan Monday – The Use It Up Edition

I’m on a mission to clear out some room in my freezer in order to start doing some Once A Month Cooking (more on that later).  I also still have a healthy stockpile and did a quick inventory of my freezer and was shocked when I realized how many things that I forgot were in there!

This menu plan may not seem that exciting, but it was thrown together with what I had on hand and a $21 trip to Aldi (more on THAT later as well).  Also, there are many days when my Brad and my children and I eat entirely different things, which is the reason for the “extra” breakfasts and lunches.

Breakfasts:

Pancakes (x2)

Cereal with bananas (x2)

Oatmeal with raisins (for me x2)

Baked Oatmeal with yogurt, apple slices

Fruit-yogurt Smoothies (for me x2….I have a ton of frozen strawberries and mixed berry blends)

Scrambled eggs, toast, sausage links (Sunday)

Lunches

Peanut butter & jelly, oranges

Chicken nuggets, macaroni & cheese

Chicken salad on a bed of lettuce, carrot sticks

Grilled ham & cheese, apples

Broccoli & cheese potatoes

Soup & salad

leftovers

Dinners

Monday:  Sauteed Shrimp and green peppers  with Citrus Soy Sauce (I found a Wegmans sauce in my freezer and have frozen shrimp as well), Brown Rice, Green Giant Valley Steamers broccoli

Tuesday:  Chicken cutlets, Spinach, Rice & Cheese Casserole (trying a new recipe – will post if it turns out well because this will be a candidate for Once a Month cooking)

Wednesday:  Bratwurst Skillet (sautee bratwurst and peppers and onions), salad, homemade beer bread

Thursday:  Layered Mexican Chicken, salad, corn bread

Friday (no meat):  Cheese Spatzle (bought the egg noodles at Aldi – using the recipe on the bag), salad

Saturday:  Pizza, Chinese, dinner out or impromptu barbeque with friends

Sunday:  Whole wheat rotini with homemade pasta sauce and turkey meatballs, salad

 

Snacks

Pumpkin Muffins, banana bread, carrot sticks w/fat free garlic dip, pretzels, sugar-free jello, sugar-free pudding w/cool whip, apples, tortilla w/peanut butter or cheese rolled up and put in the microwave to heat, boiled eggs, yogurt

Beverages:

Milk, apple/orange/cranberry juice, water, iced tea

    I’ve never tried a WW recipe, but that Layered Mexican Chicken looks and sounds good.

      it really is delish! I often substitute reduced fat dairy (for the sake of the rest of my family who thinks fat-free dairy products should be banned)

      The recipe is also a very large one (designed to provide leftovers for the rest of the week). I usually halve it and make it in an 8×8 pan!

    Great menu! I am always so impressed with folks who can plan all three meals (and snacks? gal!) when I can barely pull it off to plan 4-5 dinners. I need to get back on the clean-it-out kick too.

    Yay! I love reading your menus, Mindi. As a weekly menu planner myself, it’s really great for me to get ideas. Here’s my week, in case anyone cares:

    Breakfasts
    Raisins Bread with pb or cream cheese
    Zucchini bread from the freezer
    Cheerios with bananas
    Hardboiled eggs

    Lunch
    Leftover black beans and spanish buckwheat (it’s a grain that I use in place of rice) with cheese
    Leftover oven fried chicken with veggies
    Tuna Salad in a wrap
    Soup and salad
    PB and J

    Dinner
    M – Tacos with beans and spanish buckwheat
    T – Burrito with grains, beans, and cheese
    W – Oven Fried Chicken, potatoes, oven olive oil roasted brussell sprouts
    R – Omelet, toast, homefries, and sausage
    F – Going to my mom’s for dinner
    S – Homemade Cheesesteaks with oven baked fries
    Su – Chicken with spaghetti and marinara sauce, garlic bread

    Snacks
    Whole grain goldfish
    Carrots and cucumbers with homemade hummus
    Bananas
    Plain yogurt and honey
    Del Monte Fruit cups (free!)
    Light Ice Cream (after dinners)
