
If you are making a ham for Easter, don’t throw out the ham bone! Wrap it up and throw it in the refrigerator or freezer to use for some great recipes! Most of them are soups or stews, but I LOVE soups and stews!

Emeril has this recipe for Ham Hock, Red Beans and Rice (just substitute the bone for the hock)
And no list would be complete without a Ham & Potato soup!!
Now I just have to deal with fighting my sister for her ham bone on Sunday (although I have a bunch of hams in the freezer from stocking up at Giant!)

I usually make black bean soup with my leftover ham bone. I usually make it in my crockpot. I soak my beans over night. I then add chopped onion, the ham bone and some cumin, garlic, bay leaf and pepper. The soup cooks all day. At dinner time I remove the bay leaf and ham bone and blend with my immersion blender. I then add in corn, diced tomato and some of the leftover ham. I cook for an additional 10- 15 minutes and then serve with some grated cheddar, avacado and a dollap of sour creme with cornbread on the side. Yum!!
