    Chocolate Peppermint Fudge | Christmas Cookie Idea

    So if you haven't been able to tell, I have a things for Christmas Cookie recipes. I also have a thing for the combination of chocolate and peppermint (have you tried my Oreo Peppermint Cookie Balls yet?) If you need a last-minute treat to take to a party or send in to school with your children, this Peppermint chocolate fudge needs only a few ingredients and takes longer to cool than it does to make!

    Microwave Chocolate Peppermint Fudge

    Ingredients:
    (2) 14 oz Packages of Semi-Sweet Chocolate Chips
    1 ½ Cans Condensed Milk (21 oz)
    1 teaspoon Peppermint Extract
    3 Candy Canes

    Directions:
    Chop candy canes in a food processor or crush inside of plastic bag
    Combine chocolate chips, condensed milk and peppermint extract in a large bowl
    Microwave for 1 minute and then stir
    Return to microwave for an additional 1 minute
    Mix until smooth
    Pour mixture into a greased 8X8 pan
    Top with candy cane pieces
    Refrigerate for 1 hour

    One thing that I like to do: when you chop the candy canes, you will likely have some "candy cane dust" mixed in with the chunks. Simply blend the dust in with fudge before pouring it in to the pan. It just gives it a little more peppermint flavor! This is also a good way to get the flavor in to the fudge if you don't have peppermint extract and don't want to go out and buy it!
