    Frugal Fat Fighters: Bisquick Edition

    So as you may have heard, I have an obscene amount of Bisquick now.  Fifteen boxes, to be exact.  And while my kids eat pancakes or waffles 4 out of 7 days per week (I make a triple-batch on Saturday or Sunday and freeze the rest), I was looking for some recipes that, not only would my family of picky/boring eaters like, but would also fit in with my Weight Watchers diet.

    Salsa Chicken Fiesta

    4 Points per serving

    Serves 6

    Ingredients:

    • ⅔ cup Bisquick Heart Smart mix
    • 2 Tbs water
    • ¼ cup fat free egg substitute, or 2 egg whites
    • 1 ½ cups shredded reduced-fat Cheddar cheese (we actually used Cheddar-Jack)
    • 3 (about 1 lb) boneless, skinless chicken breasts, cut in to ½" cubes
    • 1 ¼ cup salsa

    Directions: 

    1.  Heat oven to 400.  Spray an 8" or 9" pan with non-stick spray.  Combine Bisquick, egg substitute/whites and water and spoon/spread in to pan.  Top with 1 ¼ cups of the cheese

    2.  In a non-stick skillet sprayed with non-stick spray and over medium-heat, saute the chicken until the outside turns white (do NOT cook completely).  Stir in salsa and heat until hot.

    3.  Spoon chicken/salsa mixture over batter/cheese, leaving ½" room on all sides

    4.  Bake 22 to 25 minutes or until the edges are dark golden brown.  Sprinkle with remaining cheese and put back in oven for 1-3 minutes or until cheese is melted.

    Serve with lettuce, diced tomatoes and fat-free sour cream, if desired (don't forget to add the Points for the Sour Cream).

    Cost?  The Bisquick was pretty much free (I ended up paying pennies per box), chicken was about $1 (I never pay more than $2/lb), the egg whites cost about $.25, the cheese was about $1.50 and the salsa I probably paid $1 for (based on what I usually pay).

    Total for recipe:  $3.75

    Price per serving:  $.62

      This is one of my all time favorites, Impossibly Easy Cheeseburger Pie--in fact, it is on the menu plan for this week! You can use ground turkey in place of the beef (or venison like us), egg sub, skim milk, etc. to lower the fat content. Another one I love is the Easy Chicken Pot Pie. I copied the heart-healthy recipe, but there is a regular version too. These are all from the Betty Crocker website.

      Impossibly Easy Cheeseburger Pie

      Prep Time: 15 min
      Total Time: 40 min
      Makes: 6 servings

      1 lb lean (at least 80%) ground beef
      1 large onion, chopped (1 cup)
      1/2 teaspoon salt
      1 cup shredded Cheddar cheese (4 oz)
      1/2 cup Original Bisquick® mix
      1 cup milk
      2 eggs

      1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
      2. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
      3. In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
      4. Bake about 25 minutes or until knife inserted in center comes out clean.

      1 Serving: Calories 325 (Calories from Fat 190 ); Total Fat 21 g (Saturated Fat 10 g); Cholesterol 135 mg; Sodium 530 mg; Total Carbohydrate 11 g (Dietary Fiber 0g); Protein 23 g Percent Daily Value*: Vitamin A 8 %; Vitamin C 0%; Calcium 18 %; Iron 10 % Exchanges

      Reduced-Fat Chicken Pot Pie

      Prep Time: 20 min
      Total Time: 50 min
      Makes: 6 servings

      1 cup cut-up cooked chicken
      1 bag (12 oz) Green Giant® Valley Fresh Steamers™ frozen mixed vegetables, thawed
      1 can (10 3/4 oz) condensed 98% fat-free cream of chicken soup
      1/2 cup fat-free (skim) milk
      1 cup Bisquick Heart Smart® mix
      1/2 cup fat-free (skim) milk
      1 egg
      1. Heat oven to 400°F. In ungreased 2-quart casserole, mix chicken, vegetables, soup and 1/2 cup milk. Microwave on High 4 minutes; stir.
      2. In small bowl, stir Bisquick® mix, 1/2 cup milk and the egg with fork until blended. Pour over vegetable mixture.
      3. Bake uncovered about 30 minutes or until golden brown.

      Nutrition Information:
      1 Serving: Calories 220 (Calories from Fat 50); Total Fat 6g (Saturated Fat 1 1/2g, Trans Fat 0g); Cholesterol 60mg; Sodium 650mg; Total Carbohydrate 28g (Dietary Fiber 2g, Sugars 7g); Protein 14g Percent Daily Value*: Vitamin A 30%; Vitamin C 2%; Calcium 15%; Iron 8% Exchanges: 1 Starch; 1/2 Other Carbohydrate; 1 Vegetable; 1 Medium-Fat Meat Carbohydrate Choices: 2

      First ... Hi! I just recently started following you - I think I picked your blog up off of another one, but I loved your site and added you to my list of blogs I love!

      Second ... Oh my gosh - this post couldn't have been more timely! I had to buy a large (5#) box of Bisquick over the holidays to make sausage balls because that is all they had left in the store the day I went, and I went back to my WW diet this month, so I was wondering what the heck was I gonna do with all the BQ! Mine isn't the heart smart version though so I'll have to adjust points, but that's okay, I usually have enough to work with most days.

      I do look forward to seeing what you try and anything that others post! Yaay!

      Another one similar to Jennifer's is Ham and cheese pie. Use ham & broccoli instead of hamburger.

      Or add taco seasoning to the beef and make Taco Pie.
