I got hooked on Mission tortillas when I was pregnant with Thomas (my oldest). For some reason, the only thing I could hold down the first few months was a tortilla with a little bit of peanut butter on it, stuck in the microwave for 15 seconds and rolled up like a burrito. To this day, it remains one of my favorite snacks.
Mission tortillas are a pantry staple that we always keep in the house and that I have been giving my children since they were old enough to start "real solids". When they were ready for finger foods, I would take a large tortilla and some whole milk mozzarella or cheddar cheese, fold the tortilla in half and put it in the microwave until the cheese melted. Then I would just take a pizza cutter and cut them in to tiny squares (and when they got older, I got creative and even used cookie cutters to give them star-shaped sandwiches).
In 2 weeks, the kids will be starting school again and with Mission – Back To School is a little easier. I intend to not let them buy lunch nearly as much as they did last year and it is super-easy to make them a ham & cheese roll-up on a tortilla and send it with them to school. The best part is, since it is so quick & easy to make, the kids can even start making their own lunches for school!
Of course, Mission tortillas aren't just for quick and easy lunches. As a replacement for traditional breads and rolls, you can get really creative. One of Brad's new favorite dinners is the Cheeseburger Quesadillas (pictured above) that I found on the Mission Menus website. I have to admit, when it comes to creating meals with tortillas, I wasn't very good at "thinking outside of the Mexican Box"....but between the Cheeseburger Quesadillas, the Low Carb Stromboli Wraps and the Spinach, Chicken & Artichoke Quesadillas, there are plenty of dinner recipes that will satisfy even my picky-eater family.

I recently realized I have a gluten allergy, and gluten free bread is both gross and pricey. Mission corn tortillas have become a staple in this house.
We use them for tacos. We use them to make regular sandwiches. We put cheese in between two of them and fry them for quesedillas.
But my very favorite thing do use them for is to brush oil on both sides and cook a few in the oven until they get crispy. I add sea salt or brown sugar and cinnamon depending on my mood. They get crispy enough to eat with dip so you can dip it in salsa, sour cream dip, or applesauce. Cheap, easy, allergy free, and delicious.

My experience with Mission tortillas has been awful. I have yet to make it through a meal where their tortillas don't completely and utterly fall apart to shreds. The one positive thing I will say about Mission is that they have been good in the past about sending "We screwed up" coupons when I've called and complained about their low-quality product.
Now I've switched to making my own tortillas. They're quick and easy to make, they only cost a few cents per batch, they don't include preservatives, they taste better, and above all else, they don't fall apart!

I love LOVE Mission tortillas!!! They are great pan fried with a little olive oil for dips or with some shredded chicken, cheese, bacon and ranch eaten like a wrap YUM! The cheeseburger quesadillas sound like something my husband and boys would like too... I'm going to try them!

My son loves cream cheese roll-ups. Delicious with garden cream cheese and cucumbers! He eats them almost daily!
