Menu Plan Monday: The "I Need To Go Shopping" Edition

    by Mindi Cherry

    menu-plan-monday

I'll make a little confession:  I haven't been grocery shopping beyond milk & produce for 2 weeks.

But I sort of like it...it has forced me to be creative and I am still on a mission to clear out some room in my freezer in anticipation of some serious Once A Month Cooking.

The upside is that, by living off my stockpile, I have managed to only spend $25 per week for the last 2 weeks on groceries.  What did I do with the other $25 from my weekly $50 budget?  It's sitting in an envelope waiting to go towards a bill or a great stock-up sale on meat!

So once again, this a "Use It Up" menu:

    Breakfasts:

    Pancakes (x2)

Cereal with bananas or strawberries (x2)

Oatmeal with raisins (for me x2)

Baked Oatmeal with yogurt & strawberries

    Fruit-yogurt Smoothies

    Waffles, bacon, eggs (Sunday)

    Lunches

    Peanut butter & jelly, oranges

    Chicken nuggets, macaroni & cheese

Chicken salad wraps (chicken salad, tortilla, lettuce)

    Grilled ham & cheese, apples

    Broccoli & cheese potatoes

    Soup & salad

    leftovers

    Dinners

Monday:  Whole Wheat Rotini with turkey meatballs & homemade tomato sauce (this was supposed to be last night's dinner, but my children wanted homemade pizza instead)

Tuesday:  birthday party barbeque with friends

Wednesday:  hot dogs, macaroni & cheese (we have Variety Show practice this night, so it is "quick dinner" night)

Thursday:  Chicken cutlets, cheese potatoes, steamed broccoli, homemade bread

Friday (no meat):  Cheese Spatzle (bought the egg noodles at Aldi - using the recipe on the bag), salad.  Was supposed to have this last Friday, but Hubs had other ideas

Saturday:  We have 2 parties that day, so others will be feeding us

Sunday:  Pork tenderloin in the crockpot, mashed potatoes, peas, homemade bread

    Snacks

Pumpkin Muffins, banana bread, carrot sticks, pretzel goldfish, sugar-free jello, sugar-free pudding w/cool whip, oranges, tortilla w/peanut butter or cheese rolled up and put in the microwave to heat, boiled eggs, yogurt

    Beverages:

Milk, apple/orange/cranberry juice, water, iced tea

Yay! This is one of my favorite posts! I actually haven't been shopping in a while either, but will make a trip this week. I love reading your menu plans - it reminds me to use up some things I might have forgotten about.

      -Egg salad sandwich
-PB and J when I run out (or get sick of) eggs
-Snacks with lunch: Carrots, Cucumbers, Goldfish, Chocolate Graham Crackers, apples and pb

      Dinner:
Monday - Sloppy Joe on whole wheat rolls with pepper jack cheese
Tuesday - Clean out the fridge with whatever is left from above
Wednesday - Oven Fried Chicken, Potatoes with olive oil, Salad, Veggies, Bread
Thursday - Whole wheat pasta and sauce with chicken
