    Pumpkin Whoopie Pies

    It's not fall until I start baking things with pumpkin! I love the combination of pumpkin and cream cheese, there's nothing better! Here's a fun recipe for Pumpkin Whoopie Pies. You will need:

    • ¾ c. brown sugar
    • ¾ c. white or turbinado sugar
    • 1 c. light olive oil
    • 1 can or jar of pumpkin
    • 2 eggs
    • 1 t. vanilla
    • 3 c. flour
    • 1 t. baking soda
    • 1 t. baking powder
    • 1 t. cinnamon
    • 1 t. pumpkin spice
    • ½ t. salt

      At Kohl's they have a whoopie pie maker. Its kind of like a waffle iron that you make the pie parts. Maybe this would work well with this recipe. hmmm. New ideas everyday.
