    Cherry Cheesecake Brownies

    Brownies are always a big thing in our house. If I were to ask my kids what their favorite "regular" dessert (meaning one that doesn't require a whole lot of effort on my part), they would undoubtedly say "Brownies!". From a box, from scratch - they don't really care. I usually try to make my brownies from scratch, but we do keep a few box mixes on hand for "emergency brownies" (it's a thing - trust me!).

    The kids do like me to "mix it up" a little bit when I make them brownies. Sometimes it is just as simple as throwing some chocolate chips in the batter and sometimes I will make them buttercream-filled brownie "sandwiches". These cherry cheesecake brownies are a recent addition to our "brownie recipe box" and my husband absolutely loves them!

    For this post, I've made them using just a standard box of brownie mix, but you can always substitute in your favorite from-scratch brownie recipe (I just skip the icing part when I make these as "regular" brownies).

    You will need:

    • 1 box of brownie mix + ingredients to make them according to box directions
    • 8 oz Cream Cheese, softened
    • 1/2 cup Sugar
    • 1 Egg
    • 1/2 tsp Vanilla
    • 1/2 cup Cherry Pie Filling

    Simply mix up your brownie batter and pour in to a prepared 9"x13" pan

    Mix your cheesecake batter and spread that on top of the brownie batter. Then just bake for about 25 minutes, top with the cherries from the pie filling and return to the oven for another 10 minutes!

    Cherry Cheesecake Brownies | Easy Weeknight Dessert!

    Give your favorite brownie recipe a new twist with a delicious layer or cheesecake and cherries on top!

    Yield - 12 servings

    Preparation Time - 15 minutes

    Cooking Time - 30 minutes

    Ingredients

    • 1 box of brownie mix + ingredients to make them according to box directions
    • 8 oz Cream Cheese, softened
    • 1/2 cup Sugar
    • 1 Egg
    • 1/2 tsp Vanilla
    • 1/2 cup Cherry Pie Filling

    Directions

    • Preheat oven to 350; Butter or grease a 9"x13" pan.
    • Prepare the brownie batter according to box directions (or use your favorite brownie recipe).
    • Pour batter into prepared pan and level the top with a knife or spatula.
    • Beat together cream cheese, sugar and vanilla.
    • Add beaten egg the the mixture and continue beating until completely combined.
    • Gently spread cream cheese mixture on top of brownie batter.
    • Bake for 25 minutes.
    • Remove from oven and sprinkle the cherries from the pie filling evenly on top of cheesecake.
    • Return to oven and bake additional 10 minutes.
    • Allow to cool on counter for 45 minutes.
    • Refrigerate for several hours before cutting.
