Oh - potato soup! Creamy, filling and full of stick-to-your-ribs goodness! There is no reason that you should ever buy it...not when you have such an easy potato soup recipe! This takes just a few minutes to put together and then it will cook in your slow cooker for about 8 hours. When it is done, just serve it with some nice crusty bread and you have a hearty dinner!
You will need:
- 8 medium Potatoes cubed
- 1 Onion finely chopped
- 1 quart Chicken Broth
- 1 lb Bacon, but in to 1" pieces
- 1 cup Shredded Cheese
- 1 cup Half and Half
- ¼ cup Butter
- 1 tablespoon Garlic Powder
- 1 teaspoon Pepper
- 2 teaspoon Salt
Making it couldn't be simpler!
Just chop up your potatoes and onions
And fry your bacon (make sure that you drain it well on paper towels after cooking)
Reserve a little bit of the bacon for garnish when you serve it, and dump everything in to your crockpot!
After about 8 hours on low, your potato soup will be done!

- Chop potatoes and onions
- Fry bacon until crisp. Drain well on paper towels. Reserve some bacon for garnish
- Add all items into the slow cooker and stir to combine.
- Cook on low for 8 hours.
- Ladle soup in to bowls. Top with reserved bacon
- Serve & Enjoy!

made this today... YUMMY! I added 2 cans of mixed veggies with the liquid, added about 1/2 cup more half and half than the recipe calls for, left the skin on the potatoes, and topped with shredded cheese right before eating. Turned out GREAT! My hubby loved it! Will definitely make again.
