Mini Lemon Meringue Pie Recipe

If you will be baking this year for any holiday dinners (or just want another easy dessert for your family), this lemon meringue pie recipe is sure to be a crowd-pleaser! Mini desserts are so popular right now and this mini pie pan can be used to make so many of your favorite desserts in smaller form. You can even use it with your favorite quiche recipe!

I have sort of a love-hate relationship with my lemon meringue pie recipe. I love that it is so easy, but I hate that it uses a pudding mix. It is a long-running joke in my family that I seem to be incapable of making lemon-meringue pie from scratch. For some reason, so matter what recipe I try, the filling never seems to set properly and it is always running all over the place. At least with this recipe, you know the filling will set up properly!

Anyway, to make it, you will need:

INGREDIENTS

  • 1 Package Ready made Pie Crusts (or you can make your own)
  • 1 Package Lemon Pudding and Pie Filling
  • 1 3/4 cups cold Milk
  • 3 Egg Whites
  • 1/8 tsp Cream of Tartar
  • 1/8 cup sugar

DIRECTIONS

  1. Cut two 5 1/4″ circles from one of the crusts and insert in pans (use enclosed cutter from your mini pie pan)
  2. Bake at 400 degrees for about 10 minutes.
  3. Allow to cool before removing.
  4. Add Lemon pudding pix and milk to medium bowl.
  5. Mix for 1 minute.
  6. Fill pie crust with Pie filling.
  7. Place 3 egg whites in a bowl and whip until peaks form.
  8. Slowly add sugar and cream of tartar.
  9. Top pie with meringue making sure it touches crust.
  10. Bake at 400 degrees for about 10 minutes. Be careful not to burn the meringue!
  11. Allow to cool before removing.
