Time for another great meal idea! These Southwestern Egg Rolls look yummy and use all kind of summer vegetables. To make them you need:

  • 2 tablespoons olive oil, plus extra for brushing
  • 1 pound skinless, boneless chicken breasts – diced
  • 1 medium-large onion, minced
  • 1 cup frozen corn
  • 1 (14.5)oz can black beans, rinsed & drained
  • 2.5 cups fresh baby spinach
  • 2 jalapenos, seeded & minced
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 2 cups shredded pepper jack cheese
  • salt & pepper to taste
  • 10 taco sized flour tortillas

Strawberry Cheesecake Popsicles

Don’t these look amazing? I think these Strawberry Cheesecake Popsicles would make a great cold summer snacks. To make them you need:

  • 8 ounces cream cheese
  • ¼ cup sour cream
  • 3/4 cup powdered sugar
  • 1/3 cup whole milk
  • 6 large fresh strawberries, chopped or ¾ cup frozen strawberries
  • 6 standard sized graham crackers
  • 1 tbs melted butter

Fresh Herb Tuna Salad

Here’s a great recipe you will want to try this summer if you are growing fresh herbs in your kitchen or if you pick some up at the farmer’s market. To make this Fresh Herb Tuna Salad you’ll need:

  • 1/2 cup mayonnaise or salad dressing
  • 3 French sorrel leaves, snipped (about 2 tablespoons)
  • 1 tablespoon snipped fresh chives
  • 1 tablespoon snipped fresh lovage
  • 1 teaspoon snipped fresh tarragon
  • 1/4 teaspoon curry powder
  • Dash black pepper
  • 1 teaspoon snipped fresh dillweed (optional)
  • 1 9- or 9-1/4-ounce can chunk or solid white tuna (water pack), drained and flaked
  • 1 yellow sweet pepper, halved and seeded (optional)
  • Assorted salad greens and fresh herbs (optional)

  • 2/3 c. milk
  • 1 (3.4 oz) box instant coconut flavor pudding mix
  • 2 1/2 c. quick cooking oats
  • 1 c. sweetened shredded coconut
  • 1/2 tsp. vanilla

Patriotic Poke Cake

Still searching for a last minute dessert to make for the 4th of July? Here’s a Patriotic Poke Cake recipe that’s simple, looks good, and uses ingredients in your pantry!

For the cake:

  • 1 box (18 oz.) white cake mix (also eggs, oil and water
  • called for on the box)
  • 2 cups boiling water
  • 2 pkg. (3 oz. each) red jello (any flavor)

For the frosting:

  • 1/2 cup butter, softened
  • 2 tsp. vanilla extract
  • 3-3/4 cup powdered sugar
  • 3-4 tbsp. milk
  • blue food coloring, (I prefer the 1 oz. bottle made by Wilton)
  • Patriotic colored sprinkles

Ding Dong Cakes

Did you grow up having Ding Dongs for snacks? Well now you can easily make them at home instead of making a trip to the store. You’ll need:

  • 2 ounces semisweet chocolate
  • 1 cup hot brewed coffee
  • 2 cups sugar
  • 1 2/3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder (not Dutch process)
  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoons salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup well-shaken buttermilk
